Recipe
For Chilli :
SPICY
HOT MEXICAN POTATOES

Ingredients
3 Hot red chillis (de-seeded) chopped
4 tbsp olive oil
4oz/400g can of chopped tomatoes
1 red and green pepper, de-seeded and sliced
1 1/2lb/700g new potatoes (cut into 1/4inch
slices)
2 onions (Red onions optional) Finely chopped
1-2 tbsp lemon or lime juice
salt and ground black peppercorns
Garnish with chopped coriander
Method
Fry the potatoes in oil in wok or pan for about 8
– 10 minutes, turning occasionally
until golden and crispy .
Add the chillies, peppers and onions to the wok
and cook for about 10 minutes and
stir, making sure it doesn’t stick.
Now add the tomatoes and continue to cook for
about 5-7 minutes and add the juice of
lemon or lime and serve hot.
Serves 4

This

the night before and store everything in the fridge for the
following day.

is especially valuable if you're at work all day and are pushed
for time. I have cooked all these dishes myself and can say in
